In today’s episode I demonstrate one of my very favorite, easy dressing recipes. I am using it on a a sweet potato and wild rice salad which has been adapted from a terrific recipe from the Annual Forks Over Knives Meal Planner. Sweet and Smoky Dressing
1 cup of water
1/2 cup of lime juice
4 ounces of pitted dates
1/4 cup Westbrae salt-free mustard
1 teaspoon chia seeds
2 teaspoons SMOKED paprika
1/4 teaspoon chipotle powder
Blend all ingredients in a blender until smooth and creamy. Refrigerate any unused portion.
